Nougat is quite delicious, chewy and can be eaten all year long. We included a salted caramel filling to add a little extra sweetness.

  • 3 egg whites
  • 1 1/2 C. sugar
  • 1 1/4 C. light corn syrup
  • 1/4 C. water
  • 4 C. sugar
  • 1/2 C. butter, melted
  • 4 tsp. almond extract
  • Caramel Filling:
  • 1/4 C. corn syrup
  • 1/2 C. white sugar
  • 1/2 C. heavy cream
  • 1/2 tsp. vanilla
  • 2 Tbs. butter, salted

In a mixing bowl, beat egg whites until they form stiff peaks. In a heavy saucepan, mix 1 1/2 C. sugar and 1/4 C. water until it forms syrup. Cook for 5 to 6 minutes. Slowly add hot syrup to egg whites while mixer is on medium speed. Beat for 10 to 12 minutes. Transfer to a greased bowl. In another saucepan over medium heat, mix the remaining water and sugar. Cook and stir for about 13 to 15 minutes.

While waiting, prepare caramel filling by mixing sugar and corn syrup in heavy saucepan. Bring to boil and shake pan gently to avoid burning sugar. Warm up cream in microwave. Remove sugar mixture from heat and beat in cream while stirring constantly. Return to heat. Add butter and vanilla. Bring to a boil and heat to 250 degrees F. Let it sit for 2 to 3 minutes. 

Pour nougat mixture into a bowl and stir until blended. Mix in butter and almond extract. Pour half of mixture in baking dish. Then add caramel filling. Top off with remaining nougat mixture. Allow to stand for at least 5 hours or until firm.
