Try this spicy Italian recipe! This spicy dish makes for a great appetizer or snack for all occasions. Just stuff red peppers stuffed with olives and goat cheese to make this tasty treat!

Ingredients

  • 1 cup white vinegar
  • 1 cup white wine
  • 2 1/2 cups water
  • 24 Red Cherry Peppers
  • 24 Green Olives with Pimentos
  • 2 oz goat cheese
  • ½ lemon, zested and juiced

Directions

Start by removing the pepper's stalk and insides.
In a bowl, add vinegar, wine, and water and place pepper inside.
Cover the bowl with a cloth and leave for 12 hours.
Use the cloth to sit the peppers opening down on and leave for 24 hours to drain.

Add the pimentos to a bowl with goat cheese, lemon zest and juice. Add brine while mixing the ingredients together until mixture is a creamy texture.
Place mixture into a Ziploc bag for piping.
Place olives inside of the red peppers.
Cut the tip of the Ziploc bag and pipe the mixture into the red pepper covering the olive.
Serve.
