Fragrant and tasty, these juicy drumsticks and bite-sized garlicky baby potatoes make a hearty meal, in just one pot!

  • 8 chicken drumsticks
  • 1 cup of your favorite barbeque sauce
  • 4 cups of baby potatoes, washed and scrubbed
  • 1 cup of olive oil
  • 3 tablespoons of minced garlic
  • 4 sprigs of fresh thyme
  • salt and pepper

Preheat oven to 400 degrees Fahrenheit.
In large Ziploc bag, combine drumsticks and the barbeque sauce; toss to coat evenly. Set aside to marinate.
In a dish, whisk together the olive oil, garlic, salt and pepper. In another large Ziploc bag, combine this mixture with the baby potatoes.
In a large pot, line the bottom with the entire contents of the bag with baby potatoes and then just the drumsticks from the other bag. Top with fresh sprigs of thyme, then cook covered for about 30 minutes until the chicken is cooked and the potatoes are soft.
