  • 3 cups blended quick oats
  • ¼ cup almond milk
  • 1 cup pumpkin puree
  • ¾ cup sugar
  • ½ cup melted coconut oil
  • ¼ cup orange zest
  • ½ cup orange juice
  • 1 ½ cups chocolate chips
  • 1 teaspoon vanilla
  • 1 cup pumpkin puree
  • ¼ teaspoon nutmeg
  • 2 teaspoons cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 tablespoons flaxseed meal

Blend the oats in a food processor until they’re smooth. In a small bowl, mix 3 tablespoons almond milk with the flaxseed and let the mixture sit for 5 minutes. In another bowl, whisk the cinnamon, vanilla, baking soda, sugar, salt, and nutmeg together. Add the flaxseed mixture, pumpkin puree, and coconut oil and stir well. Pour in the orange juice and add the orange zest. Stir. Slowly add the oats and stir again. Wait a few minutes before adding the rest of the almond milk and stirring the dough together. Fold in the chocolate chips and then drop spoonfuls of dough onto a baking sheet. Bake for 12 minutes at 375.
