Pan Fried Perch Fillets

This is an excellent recipe for fishing trips because it's an easy way to cook your catch! It's also great at home and always an easy dish.

  • 8 perch fillets
  • 3 C. all-purpose flour
  • 3 Tbs. paprika
  • 1 tsp. garlic powder
  • 1 tsp. salt
  • 2 eggs
  • 2 C. milk
  • 1/2 C. butter

Mix the flour, paprika, garlic and salt together and set aside. In a bowl, whisk the egg and the milk. Heat the butter in a large non-stick skillet. Dip the perch fillets in egg wash first and then into the flour mixture. Carefully place them into the hot butter in the skillet and brown on both sides. Remove from the pan and place on a paper towel lined plate--keep warm and cook the remainder of the fillets. Add more butter to the pan if needed. Serve immediately.
