  • 1 1/2 C. rolled oats
  • 1/4 C. milk
  • 1/4 C. heavy cream
  • 1 large egg
  • 1 1/2 C. all-purpose flour
  • 1/4 tsp. ground cinnamon
  • 1/3 C. granulated sugar
  • 2 tsp. baking powder
  • 1/2 tsp. table salt
  • 10 T. unsalted butter, cold, cubed
  • 1/2 C. raisins
  • 1 T. sugar

Preheat your oven to 375°F. Spread oats on baking sheet and toast until fragrant and golden brown. Increase oven temperature to 450°F and line a second baking sheet with parchment paper. When oats have cooled, set aside two tablespoons. In a small bowl, whisk milk, cream, and egg. Remove one tablespoon to be used as a glaze. In a blender or food processor, pulse flour, cinnamon, 1/3 cup sugar, baking powder, and salt until combined. Add in butter and continue pulsing until batter looks like cornmeal. Transfer mixture to medium bowl and stir in oats and raisins. Fold in liquid ingredients until large clumps form and mix dough by hand in bowl. Dust counter with half of reserved oats and drop the dough. Dust top with remaining oats and gently pat into a seven-inch circle with one-inch thickness. Cut dough into eight wedges and set on lined baking sheet. Brush each with reserved egg mixture and sprinkle with one tablespoon of sugar. Baking for 13 minutes and remove scones to cooling rack. Serve at room temperature.
