This simple salads consists of parmesan cheese and arugula.

  • 2 Tbs. virgin olive oil
  • 2 Tbs. balsamic vinegar
  • salt
  • pepper
  • 2 bunches arugula
  • 2-oz piece parmesan cheese

Trim tough stems off arugula and discard bad leaves. Wash arugula and then dry. Tear it into bite-size pieces. In a large bowl, drizzle arugula with oil and toss well. In a small bowl, whisk vinegar, salt and pepper together until salt dissolves. Pour vinegar over salad and toss again. Shave the cheese and put it over the salad. Serve.
