  • 1 C. all-purpose flour
  • 3/4 C. quick cooking oats
  • 1/3 C. packed brown sugar
  • 1 Tbs. baking powder
  • 1 C. milk
  • 1/2 C. peanut butter
  • 1/2 C. mashed ripe banana
  • 1 egg, beaten
  • 2 Tbs. vegetable oil
  • 1 tsp. vanilla extract
  • 1/4 C. all-purpose flour
  • 2 Tbs. butter, melted
  • 2 Tbs. packed brown sugar

Preheat oven to 375 degrees. Grease 12 muffin cups or line with paper muffin liners. Combine 1 cup flour, oats, 1/3 cup brown sugar, and baking powder. Whisk together milk, peanut butter, banana, egg, oil, and vanilla. Add banana mixture to dry ingredients, mixing just until moistened. Fill prepared muffin cups 3/4 full. In a small bowl, stir together 1/4 cup flour, melted butter and 2 tablespoons brown sugar. Sprinkle topping evenly over muffins. Bake in preheated oven for 18 minutes, until golden brown. Serve warm.

  • They were really good, but I decided to throw in some semi-sweet chocolate morsels, and that did it. My children, ages 2 and 4, ate all but 4 out of 18 muffins. They loved them so much they were stealing them off the counter and hiding them in their dresser drawers till they finished the ones they were already eating. I did really like the original recipe, but I gotta have my chocolate!
