  • 4 chicken breasts, boneless and skinless
  • 2 Tbs. all-purpose flour
  • 1/2 tsp. grated lemon zest
  • 1/4 tsp. fresh ground black pepper
  • 1 Tbs. extra virgin olive oil
  • 2/3 C. reduced sodium chicken broth
  • 1 Tbs. butter, salted
  • 1 Tbs. fresh parsley
  • 2 tsp. fresh lemon juice

Mix flour, zest, salt and pepper on plate. Dip each chicken in flour mix and coat on both sides before shaking off excess. Heat oil in large skillet over medium heat. Add chicken and cook for 3 to 4 minutes on each side. Remove chicken from heat. Add chicken broth to skillet and bring to boil. Stir to scrape up brown bits. Cook for 3 minutes and then mix in butter. Remove from heat. Add parsley and lemon. Place chicken on serving plate and pour sauce over. Serve hot.
