Sirloin steak skewered with peppers, onion, mushroom, and zucchini makes a great meat kabob for upcoming barbecues or cookouts. These kabobs are especially unique with their pesto vinaigrette sauce.

  • 1 pound sirloin steak
  • 1 red onion
  • 1 red pepper
  • 1 green pepper
  • 1 zucchini
  • 12 mushroom caps
  • Olive oil
  • Salt and pepper
  • 1 garlic clove
  • 1 cup chopped basil leaves
  • ¼ cup olive oil
  • 1 ½ tablespoons champagne vinegar
  • Red pepper

Cut the beef into 1 ½ inch cubes and cut the onion into chunks of a similar size. Cut the red and yellow peppers into squares roughly the size of the beef and onion. Similarly, cut the zucchini into thick slices. Thread the meat and vegetables onto the skewers in the pattern of your choice. Pulse the garlic in a food processor and add the basil. Add the ¼ cup oil, the vinegar, and a pinch of red pepper. Process until smooth and season with salt and pepper. Brush the skewers lightly with oil and grill over high heat for 2 minutes. Brush some of the processed pesto vinaigrette over the skewers and cook for 12 more minutes, turning and brushing vinaigrette over the skewers occasionally. Season with salt and pepper and serve with remaining pesto.
