Add a little extra green to your St. Patrick's Day with delicious pesto canapés! Fill pre-baked tart shells with a generous amount of the pesto mixture before serving.

  • 1/3 C. pine nuts
  • 2 small garlic cloves, minced
  • 1/2 C. grated Parmesan cheese
  • 1/4 C. olive oil
  • 1/4 C. minced parsley
  • 1 Tbsp. minced basil
  • 1/2 tsp. black pepper
  • 48 mini tart crusts

Preheat the oven to 350 degrees and put the pine nuts on a baking sheet. Toast for 8 minutes until golden. Coarsely chop the nuts into pieces. In another bowl combine the garlic, Parmesan, olive oil, parsley, basil, and pepper. Top each tart crust with a dollop of the oil mixture and a sprinkle of pine nuts. Garnish with extra Parmesan if desired.
