  • 750 gms. pasta of your choice
  • 4 garlic cloves
  • 1 8.5 oz. jar sun-dried tomatoes soaked in olive oil
  • Fresh ground black pepper
  • Salt
  • 1 C. chopped fresh basil
  • 1/2 C. grated parmesan cheese

Cook the pasta following the package directions
Cook for about 6 minutes, stirring occasionally
Make sure that the pasta is soft, yet firm to bite
While draining, reserve 1 cup of pasta water
Rinse the pasta in cold water
In the meantime, blend the tomatoes and the oil along with salt, pepper, basil, and garlic in a food processor
Blend well and make sure that the tomatoes are finely chopped at the end
Pour the mixture in a large bowl
Add in the grated Parmesan cheese
Mix the pasta with the pesto, and add the reserved pasta water for moistening purposes
Toss to coat
Season the preparation with pepper and salt
Serve hot
