  • 2 tablespoons flour
  • 2 sliced leeks
  • 2 cups quartered mushrooms
  • 1 cup vegetable stock
  • 350 grams phyllo
  • 1 diced carrot
  • 1 cup peas
  • ¼ cup milk
  • ¼ pound cubed feta cheese
  • 2 diced cloves garlic

Preheat the oven to 390 degrees F. In a small pan, heat olive oil and fry the leek and mushrooms for 10 minutes. Add the garlic and cook for 1 more minute. Add the vegetable stock, milk, carrot, feta and peas. Simmer for 5 minutes before stirring in the flour. Remove the pan from heat and lay the phyllo on top. Pierce the pie crust with a fork a few times and then bake for 30 minutes.
