Pistachio Coconut Cookies

Using pistachio flavored instant pudding and chopped pistachios, these cookies are perfect for the nut-lover.

Ingredients

  • 1 large white cake mix (2 layer size)
  • 1 package (3 1/2 oz.) pistachio flavor instant pudding and pie filling
  • 1/2 C. oil
  • 3 Tbs. water
  • 2 eggs
  • 1/2 C. chopped pistachios
  • 1/2 C. flaked coconut

Directions

Combine all ingredients in a bowl; blend well. Drop from tsp. onto greased baking sheets. Bake at 350 degrees for 10 minutes, or till lightly browned around edges
