Pita Pockets

This blend of chicken, cheddar, broccoli rice and Monterey Jack cheese is absolutely scrumptious. Great for Football parties.

  • 2-4 boneless skinless chicken breasts
  • 1 pkg. pita bread
  • 2 8-oz. pkgs. Monterey Jack cheese, sliced
  • 2 pkgs. Lipton cheddar broccoli rice


Cook chicken and dice. Prepare Rice according to package. Slice pita bread in half. Put one slice of cheese in bottom of pita and fill 3/4 full, add another slice of cheese and top with rice. Wrap in aluminum foil. Place on baking sheet and bake at 350 for 10 minutes.

Notes: You can add extra broccoli. Whole wheat pita bread is good and you may substitute any cheese and even try different flavor of rice. Can be made ahead.
