Ingredients

  • 1 ½ C. all-purpose flour
  • 1/3 C. powdered sugar
  • 1 stick butter, cut into pieces
  • 2 ½ tsp. vanilla extract, divided
  • 1 egg yolk
  • 3 eggs
  • 1/3 C. sugar
  • 2 ¾ C. milk
  • Pinch nutmeg
  • ½ C. fresh pomegranate seeds

Directions

Preheat oven to 350 degrees. In a food processor, pulse together flour, powdered sugar, and butter until crumbly. Beat in ½ teaspoon of vanilla and egg yolk until well combined. Press dough into mini tart tins and bake for 10 minutes until golden. Reduce oven heat to 300 degrees. In a large bowl, whisk together eggs, sugar, milk, nutmeg, and 2 teaspoons of vanilla. Pour into tart crusts and bake for 30 minutes until set. Top with pomegranate seeds and enjoy!
