  • 4 green onions, chopped
  • 2 poblano peppers, seeds and stem removed, cut in half
  • olive oil
  • coarse salt
  • 2 granny smith apples, cored, and chopped
  • 2 T. minced cilantro
  • juice of 1 lime
  • 4 boneless center-cut pork chops
  • 2 tsp. ancho chili powder
  • 2 tsp. ground cumin
  • 1 tsp. chipotle chili powder
  • 1 tsp. ground coriander

Preheat your oven to 475°F. Place poblano peppers and green onions on a baking sheet, drizzle with olive oil, season with salt. Roast for 10 minutes. Once cooled, dice into small pieces and transfer to a mixing bowl. Mix in apples, cilantro, and lime juice. Set aside until ready for use. In a small skillet, heat about two teaspoons of olive oil over medium heat. In a small bowl, mix together ancho chili powder, cumin, chipotle chili powder, and ground coriander. Rub mixture over pork chops and season with salt. Cook each pork chop on the skillet for about three minutes on each side. Remove from skillet and garnish with apple salsa.
