Paella is a traditional Spanish dish served with seafood and considered one of the most important dishes in Valencia. You can make this in the comfort of your own home with simple the spices you probably have at home already! This also makes a perfect meal for two.

  • ½ pound of prawns
  • ½ pound of mussels
  • 3 cups of chicken stock
  • 1 cup of paella rice
  • ½ cup of onion, diced
  • ½ cup of peas
  • 2 teaspoons of garlic, minced
  • 1 teaspoon of paprika
  • 1 bay leaf
  • Juice of half a lemon

In a large skillet, cook onion, garlic, and paprika over medium heat for about 3 minutes or until fragrant. Next, add the chicken stock, rice, peas, and the bay leaf. Bring to a rolling boil and then lower the heat allow the rice to simmer for 20 minutes. Finally, add the mussels and prawns. Cook for five more minutes. Add an extra zing by drizzling with fresh lemon juice.
