  • 1 prime rib steak, about an inch thick
  • 2 cups of parsley
  • ¼ cup of cilantro
  • ¼ cup of chopped scallions
  • 1 clove of garlic
  • ½ cup + tablespoon of olive oil
  • ¼ cup of white wine vinegar
  • 2 teaspoons of red pepper flakes
  • ½ teaspoon of oregano
  • salt and pepper

Preheat oven to 400 degrees Fahrenheit.
Rub salt and pepper onto both sides of the steak. Heat the tablespoons of oil in cast iron skillet over medium-high heat and sear each side for 2 minutes each. Bake for about 10 minutes.
For the chimichurri sauce, blend parsley, cilantro, scallions, garlic, ½ cup of oil, vinegar, red pepper flakes and a little bit of salt and pepper. Set aside.
Once the steak has done its time in the oven, let sit for a few minutes, then cut into ½-1-inch-thick slices. Serve with chimichurri sauce drizzled on top.
