  • ¾ cup of flour
  • ¾ cup of milk
  • 1 egg
  • ½ cup of scallions
  • 1 tablespoon of olive oil
  • 1 teaspoon of baking powder
  • 2 handfuls of arugula
  • ½ package of prosciutto
  • ½ package of gouda cheese slices
  • fried eggs

In a large bowl, make the pancake batter by mixing together flour, milk, egg, scallions and baking powder with some salt and pepper.
Heat oil over medium heat in a pan and pour two tablespoons of batter for each pancake. Flip when the batter starts to bubble and cook each side until golden brown.
Stack a slice of gouda cheese, a slice of prosciutto and some arugula on top of each pancake. Put one fried egg on top of each stack to weigh everything down and keep it together. Enjoy!
