  • 16 oz. package premade pulled pork
  • 16 ciabatta rolls, split and toasted
  • 1 C. chopped curly kale, thick stems removed
  • 1/2 C. prepared shredded red cabbage
  • 1/3 C. prepared shredded carrots
  • 1/2 red bell pepper, sliced into bite-sized pieces
  • 1/4 C. chopped fresh cilantro
  • 3 Tbs. vinegar
  • 1 Tbs. lime juice
  • 3 Tbs. vegetable oil
  • 1 Tbs. soy sauce
  • 3 Tbs. honey
  • 1 Tbs. sugar

For the kale coleslaw, combine kale, cabbage, carrot, bell pepper, and cilantro in a large mixing bowl.
Combine the vinegar, lime juice, vegetable oil, soy sauce, honey, and sugar in a small bowl and mix until completely combined. Pour the dressing over the salad and toss well.
Heat pulled pork according to box directions.
Distribute evenly on all bottom buns. Evenly distribute coleslaw on top of pulled pork. Close sandwich and serve.
