  • 1 ½ cup flour
  • 1 cup canned pumpkin puree
  • ¼ cup brown sugar
  • 1 2/3 cup milk
  • 3 teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon ground ginger
  • 2 eggs
  • 4 tablespoons melted butter
  • ½ cup butter
  • 8 ounces cream cheese
  • 4 cups confectioners sugar
  • 2 teaspoons vanilla

In a large bowl, mix the flour, baking powder, cinnamon, nutmeg, ginger, and baking soda together. In another bowl, beat the eggs, sugar, pumpkin, milk, and melted butter together. Gently fold the flour mixture into the egg mix. In a separate bowl, beat the softened butter and cream cheese together and then add the confectioners’ sugar and vanilla. Beat until the frosting is creamy. Add the batter to the waffle iron and cook until golden brown. Drizzle with cream cheese frosting and serve.
