This recipe is a great way to use up those too ripe bananas. These muffins have a hint of spice from the cinnamon but are overall buttery and sweet.

  • 3 bananas, mashed
  • 1 egg
  • 1 cup of all-purpose flour
  • ½ cup of brown sugar
  • 3 tablespoons of butter, melted
  • 1 teaspoon of baking soda
  • 1 teaspoon of baking powder
  • 1 teaspoon of cinnamon
  • 1 teaspoon of nutmeg
  • 1 teaspoon of vanilla
  • Pinch of salt

As the oven preheats to 400 degrees, whisk together the flour, sugar, baking soda, baking powder, cinnamon, nutmeg and salt in a bowl. Set aside and mash the bananas, egg, melted butter and vanilla together in a separate bowl. Slowly sift in the flour mixture into the bananas and stir until well combined. Finally, spoon the batter into a muffin tray and bake for 15 minutes. Let cool and enjoy!
