Wish to have a perfectly roast chicken but don’t have the time? With this quick and easy recipe, you don’t have to stress yourself out. With the help of Instant Pot and a couple of good herbs and vegetables, you will won’t ever stress about having dry roasted whole chicken.

  • 5lb. of whole chicken, cavity cleaned
  • 1 medium onion, chopped
  • 2 large carrots, chopped
  • 3 stalks of celery, chopped
  • ½ garlic, smashed
  • 2-3 cups water
  • 1 tablespoon of dried thyme
  • 1 tablespoons of dried oregano
  • Salt and pepper to season

Season the chicken with salt pepper, and dry herbs on both sides. Gently lift the skin on the chicken breast and spread a good amount of herbs and salt onto the breast. This will give good flavor to the meat.
Place the vegetables and garlic into the bottom of the instant pot. Pour 2-3 cups of water and set the rack for the chicken on top of the vegetables. Place the chicken onto the rack and turn the valve to seal. Turn the pot on to the “meat” setting and set the time to 25 minutes.
After the 25 minutes are up and the chicken is cooked, let the chicken sit there to naturally release for a good 15-20 minutes. Be sure to turn the valve right away to release the pressure.
Take out the chicken and begin to serve.
