Gnocchi is a great comfort food and mixes well with just about anything. Luckily, such a tasty dish doesn't take long to make! Check out this gnocchi with mushrooms and basil for a new tasty, quick, and different meal.

  • 1 lb. gnocchi
  • 12 oz. cherry tomatoes, halved
  • 1 can diced tomatoes
  • 1 small zucchini, chopped into half moons
  • 10 oz. baby bella mushrooms, chopped
  • 1/2 C. basil, julienned
  • Salt and pepper to taste
  • Parmesan for topping, shredded

Cook gnocchi in salted boiling water for 3 minutes until it floats to top. Drain and drizzle with olive oil. Pour some olive oil on a large skillet and add cherry tomatoes. Cook for 2 minutes, add mushrooms and zucchini, and cook for 4 more minutes. Add gnocchi and diced tomatoes. Stir all ingredients together in skillet and cook for 2 more minutes. Remove skillet from heat and add in basil. Add in salt and pepper for taste and top each bowl with sprinkled parmesan.
