Coconut shrimp is always a popular restaurant appetizer. Many people enjoy the crispy and sweet coating that is different from the taste of plain cocktail shrimp. Even though it may seem difficult to create the dish at home, there is a quick coconut shrimp recipe that can be made in under a half hour. Best results are found when using fresh jumbo shrimp. Here is a simple seafood selection that works well at parties or as a special treat.

  • 1 1/4 cup flour
  • 1/4 teaspoon seafood seasoning
  • 3/4 cup pineapple juice
  • 1 egg
  • 2 cups flaked coconut
  • 1 pound peeled and deveined shrimp

1.  In large bowl, combine egg, flour, seasoning, and pineapple juice.

2.  Dip shrimp into batter, then dredge in coconut.

3.  In deep fryer or skillet, heat oil to 375 degrees, and fry each shrimp until golden. Turn occasionally.
