Place broth in sauce pan and bring to boil over high heat. Meanwhile, mix beef and crumbs together thoroughly and shape into walnut size balls. After you have all the beef shaped begin putting them into the boiling broth a few at a time. Simmer the balls for 3-4 minutes, then remove from the broth with a sieved spoon. Place cooked balls in collander to drain thoroughly. Repeat until all of the meatballs are cooked. Dispose of the broth or you can use it to make soup at another time. At this point you decide how many meatballs you need for a meal. Divide into meal size portions and freeze in sealable bags.

  • I prefer an egg for each pound of ground, extra lean beef and some Parmesan cheese added to my Italian Seasoned Bread Crumbs and I think they do better if refrigerated very cold a bit before cooking them. I used to pan fry mine, but this sounds so much easier and healthier to me.... I sure will use this next time...... thanks so much. Oh yeah, I have to have finely chopped garlic an onion for mine as well. And to make it easy, you really do not have to precook the garlic and onion before adding to meat mix.

  • Oh yes, thank you grandmacarol61, I love the bake thing also, so much less work, but unfortunately here in Florida it is just too hot to turn the oven on anytime but winter. But I love that, so easy as well. I loved all the tips.
