Sweet potato anything is great on Thanksgiving and this sweet potato chickpea curry isn’t just anything! It’s completely fantastic and hard to resist.

  • 1 lb. potatoes
  • 1 lb. sweet potatoes
  • 1 can of chopped tomatoes
  • 1 can of chickpeas
  • 2 T. coriander leaf
  • 2 tsp. chili powder
  • 1 tsp. mustard seeds
  • 1 tsp. turmeric
  • 1 tsp. cumin
  • 1 tsp. ginger, grated
  • 2 garlic cloves, crushed
  • 300 mL.vegetable stock

Chop and peel the potatoes into cubes. Heat 1 T. of vegetable oil in a pan. Add in the mustard seeds and the rest of the spices including the garlic and ginger. Let it cook for 3-5 minutes. Add in the potatoes and coat them with the spices that are already in the pan. Add in the vegetable stock and tomatoes. Cook until the potatoes soften. It should take about 15 minutes. Add in the chickpeas and coriander. Let it cook for another 10-15 minutes. Serve with rice and enjoy.
