Quinoa and Wild Rice Pilaf

Serve this as a side, use it in sandwiches and wraps, or stuff it into peppers for a yummy treat!

  • 1/2 C. wild rice
  • 1 C. quinoa
  • 1 vegetable bouillon cube
  • 2 Tbs. margarine
  • 2 scallions, thinly sliced
  • salt and pepper, to taste

Combine rice with 1 1/2 C. water in a sauce pan and bring to a simmer.  Cover and simmer gently for 30 minutes.  Add quinoa, bouillon cube, and 2 cups of water, cover, and simmer for about 15 minutes or until the water is absorbed.

Stir in margarine and scallions, add salt and pepper, and serve.
