  • 1 sheet of refrigerated puff pastry dough
  • 1 cup of raspberries
  • 1 cup of sugar
  • ¾ cup of cream cheese, softened
  • ¼ cup of sour cream
  • 3 eggs, beaten
  • 1 teaspoon of vanilla extract

Preheat oven to 375 degrees Fahrenheit.
Unfold the puff pastry sheet and cut into 18 squares. Place each square into each cup of a greased 18-muffin tin. Set aside.
In a bowl, mix cream cheese, sour cream, eggs and vanilla extract together until smooth. Gradually add sugar and mix well, then gently fold in raspberries. Evenly distribute the batter into each muffin cup. Bake for 8-12 minutes.
Cool and serve warm or completely chilled – tasty both ways!
