  • 1/2 C. rice
  • 1 qt. milk
  • 1 C. granulated sugar
  • 2 Tbs. butter
  • 1 dash salt
  • 2 eggs
  • 1 tsp. vanilla extract
  • cinnamon

Combine rice, milk, sugar, butter and salt in large sauce pan. Bring to a boil, then reduce to simmer for 90 minutes, stirring occasionally. Remove from heat. Beat the eggs until light and fluffy. Add eggs to mixture slowly, stirring continuously. Add vanilla. Return to heat and cook for additional 2 minutes. Spoon into individual cups, or one large bowl and top with cinnamon.

  • I made this rice pudding last night and it is delicious! I cut the sugar to 1/4 less and also added lemon zest while the rice was cooking. Best rice pudding and i am now addicted to it. Thank you for sharing.
