  • 1 lb boneless, skinless chicken breasts
  • 6 C vegetable oil, for frying
  • Honey-Chipotle Sauce:
  • 2/3 C natural honey
  • ¼ C water
  • ¼ C ketchup
  • 1 tbsp white vinegar
  • 2 tsp ground chipotle powder
  • ½ tsp salt
  • Batter:
  • 1 egg, beaten
  • ½ C skim milk
  • ½ C low-sodium chicken broth
  • 1½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp paprika
  • ¼ tsp garlic powder
  • ¾ C all-purpose flour
  • Breading:
  • 1½ C all-purpose flour
  • 1½ tsp salt
  • ¾ tsp paprika
  • ½ tsp black pepper
  • ½ tsp garlic powder

To begin, combine all the sauce ingredients into a saucepan and bring to a boil.  Reduce heat to a simmer and cook for about 2 minutes.  Remove from the heat and set aside.  


Heath oil in a fryer to about 350 degrees.  In a shallow mixing bowl whisk together the ingredients for the batter, expect for the flour.  Mix until smooth. To make the breading combining all the batter ingredients in another shallow bowl.  Cut the chicken into bite sized pieces and dip each piece of chicken into the batter.  Toss the chicken into the drying breading and coat completely.  

Gently drop he breaded chicken into the hot oil one at a time.  Fry for about 5 minutes or until golden brown.  Remove from oil and drain a plate with paper bowl. Continue this process till all the chicken has been fried.  Place the chicken in a bowl and pour the sauce over the top.  Toss until the chicken has been coated in the sauce. Serve up and enjoy.
