  • 1 lb. penne pasta, cooked and drained
  • 1 T. olive oil
  • ½ onion, diced
  • 4 cloves garlic, minced
  • 2 (28 oz.) cans crushed tomatoes
  • 1 tsp. hot pepper flakes
  • ¾ C. vodka
  • 1 C. heavy whipping cream
  • Salt and pepper to taste
  • ½ C. fresh basil
  • ½ C. Parmesan cheese

In a saucepan, heat oil and sauté onion and garlic until fragrant. Add in crushed tomatoes and crushed red pepper flakes; cook over medium heat for a few minutes as tomatoes break down. Once simmering, add vodka, salt, and pepper. Continue simmering and stirring for 6 to 8 minutes. Reduce heat to low, stir in cream and add basil and pasta; toss until evenly coated. Add Parmesan, heat until just melted, and serve.
