Refried Beans

Given to me by a friend while we lived in California. Very good recipe. Great with tacos, burritos, or my Chili Rellenos Recipe. Hope your family will enjoy these as much as my family does.

4-8 servings


  • 1 lb. dry pinto beans
  • 1/2 C. Monterey Jack cheese, shredded
  • 1/2 C. bacon grease
  • salt to taste


Sort beans, removing rocks. Rinse thoroughly. Put in large cooking pot and cover with water. Bring to a boil. Lower heat; cover. Simmer until done (approximately 3 hours), adding water as needed. (Beans should be covered with water at all times.) When done, drain all liquid except for 1/2 cup. Transfer beans to skillet; mash. Add bacon grease, cheese, and liquid. Heat thoroughly.

  • I see so many recipes that claim to be "authentic" Mexican dishes but this is the only one I have seen that is truly authentic. It is a simple and delicious dish like most of the Mexican food . The only thing I do differently is to add 2 or 3 cloves of garlic. By the way, my mother's nickname was Mama Jo.

  • To add more flavor to this recipe I would add garlic and onion powder.
