  • 2 C. rhubarb
  • 1 1/2 Tbs. flour
  • 2 C. sugar
  • dash of salt
  • 4 eggs
  • 1/4 C. buttermilk
  • 1/2 C. orange juice
  • 1 unbaked pie shell

Cut up rhubarb into 1/2-inch pieces. Mix together flour, sugar, salt, eggs, buttermilk and orange juice. Add rhubarb and pour into unbaked pie shell. Bake for 1 hour. Top with ice cream, if you'd like.

  • To add a little more sweetness and sparkle, sprinkle a little white sugar on the top crust before baking.
