Rice or Pasta Fagioli

Soup with navy beans and carrots with rice or noodles. Over the top to warm the heart!

  • 1 bag dried navy beans, soaked
  • 2-3 celery sticks
  • 1 med. onion, chopped
  • 2-3 carrots
  • smoked ham bone
  • garlic to taste
  • 1-2 Tbs. parsley
  • 1 Tbs. sage
  • 2 Tbs. flour
  • 4 C. water
  • 1-2 Tbs. basil
  • salt and pepper to taste
  • 1-2 C. rice or elbow noodles, cooked
  • hot peppers (optional)
  • 1 Tbs. olive or peanut oil

Soak navy beans in water overnight. Add oil to a frying pan to heat. Mix finely chopped onions, celery, garlic, salt and pepper and add to pan. Fry untill onions become translucent and celery gets juicy. Add flour to the vegetablesand lightly brown. Meanwhile, your beans have soaked overnight or at least until they have absorbed the water. Pour clean navy beans into warm crockpot along with smoked ham bone and vegetables. Add water to fill the pot, and then add salt and pepper as you go. Slice carrots and add to pot to cook with every thing for 4-5 hours on high or 8 hours on low. Toward the end, cook rice or elblow noodles in separate pot and serve crockpot mixture over cooked pasta or rice.
