  • 1/4 C. olive oil
  • 2 tsp. curry powder
  • 2 tsp. granulated sugar
  • 1 tsp. lemon juice
  • 1/2 tsp. sea salt
  • 1/4 tsp. freshly ground black pepper
  • 4 C. cauliflower florets, washed
  • 2 T. slivered almonds

Preheat your oven to 400 degrees F. Take out a small bowl and combine the olive oil, curry powder, sugar, lemon juice, salt, and pepper. Transfer the cauliflower florets into a 13x9-inch baking dish. Pour the oil over the cauliflower and carefully toss to evenly coat. Cover with aluminum foil and bake for around 15 minutes. When finished, remove from oven and stir in the almonds. Bake uncovered for an additional 15 minutes, which is around how long it should take for the cauliflower to be browned and for the almonds to be toasted.
