  • 4 bell peppers
  • 1 lb. lean ground beef
  • ¼ C. onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 (15 oz.) can tomato sauce
  • 1 C. cheddar cheese, shredded

Preheat oven to 350 degrees. Slice the top and stem off of each bell pepper and remove seeds and membranes. Place in a large saucepan, cover with water, and bring to a boil; cook for 3 to 4 minutes, drain, and set aside. In a large skillet, sauté onion, garlic, and brown beef until no longer pink. Season with salt and pepper and stir in sauce. Simmer until thickened and spoon mixture into bell peppers. Top with cheddar cheese, arrange on a baking sheet lined with foil, and bake 15 to 20 minutes until tender and beginning to brown.
