  • 6 new chicken thighs
  • 2 poblano chili, roughly chopped
  • 1/4 C. cilantro, chopped
  • 1 garlic clove, roughly chopped
  • 1 tsp. lime zest
  • 1 1/2 tsp. lime juice
  • 1/4 tsp. salt
  • 1/8 tsp. olive oil

Preheat your oven to 450 degrees F. Blend chili, garlic, zest, lime juice and salt in food processor. Slowly drizzle in 1/8 C. olive oil. Place chicken thighs on baking dish. Season with salt and pepper to taste. Roast for 30 minutes. Then reduce oven to 350 degrees F. Roast for 50 minutes. Let it rest for 10 minutes before serving.
