  • 2 C. red peppers
  • 2 C. carrots
  • 2 C. yellow peppers
  • 2 C. zucchini
  • 2 C. broccoli florets
  • 1 C. red onion
  • 1 T. thyme
  • 1 T. oregano
  • ½ T. garlic powder
  • ½ T. onion powder
  • 2 tsp. kosher salt
  • 2 tsp. black pepper

Preheat the oven to 400 degrees and baking sheet with parchment paper. Chop all vegetables and place in a large bowl. Sprinkle and mix the spices onto the vegetables then pour onto the baking sheet. Cook for 20-25 minutes or until vegetables are tender.
