Hummus is a quick and easy appetizer to make. It literally takes no time for you to whip some up and it makes for a satisfying dish. You can dip pita chips, crackers, and vegetables into hummus for a great snack any day of the week. Roasted Red Pepper Hummus is a great twist to traditional hummus and gives it a nice kick with every bite. Try this recipe out, you will not regret it.

  • 2 red bell peppers
  • 1/4 C. tahini
  • 1 can (15 oz.) chickpeas
  • 1/4 C. lemon juice
  • 1/2 tsp. ground cumin
  • 2 Tbs. olive oil
  • 1 garlic clove, minced
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

Preheat your broiler
Grab the bell peppers and remove the core from the inside
Place the pieces of pepper skin side up on an aluminum lined baking sheet
Place in the oven and broil for 10 minutes
Remove the peppers from the oven and place them into a resealable bag. Let them sit for 15 minutes
Once cooled, peel the skin from the peppers and discard
Chop the peppers
Place the lemon juice and tahini in your food processor and process for 1 minute
Scrape the sides of the processor and process again for another 30 seconds
Add in the garlic, oil, cumin, pepper, and salt
Process for 30 seconds
Drain the chickpeas and then add half of them into the processor
Process for 1 minute
Add in the remaining chickpeas and process again for 2 minutes
Add in the peppers and process for another 2 minutes
