  • 2 slices of focaccia bread
  • 1 red pepper (sliced)
  • 1 cup of arugula
  • 1 slice of mozzarella
  • 1 tomato (sliced)
  • Salt and pepper to season
  • Glaze
  • ½ cup of balsamic vinegar
  • 2 tablespoon of honey

Lightly toast the slices of focaccia bread.
Preheat the oven at 350F.
In a sheet pan, spray the pan with cooking spray. Place the sliced tomato, mozzarella cheese, and sliced red pepper and season with salt and pepper. Bake for 10 minutes.
In saucepan, heat the balsamic vinegar and honey at medium heat and mix for 10 minutes. This will create a thick glaze.
Stack the roasted tomato, mozzarella cheese, and red peppers on side of the bread. Drizzle the glaze with a spoon.
