  • 4 Slices of Bacon
  • 2 Eggs
  • 1 Tablespoon of Shredded Cheddar Cheese
  • 1 Teaspoon of Chopped Green Onions
  • 1 Teaspoon of Butter
  • 1 Large Pinch of Chili Powder
  • 1 Pinch of Garlic Powder
  • 1 Pinch of Salt
  • 1 Pinch of Pepper

Begin by greasing your skillet with ½ of the butter and whisking together 1 egg with ½ of the rest of the ingredients (besides the bacon) -- ½ of the cheddar cheese, ½ of the green onions, ½ of the chili powder, ½ of the garlic powder, ½ of the salt, and ½ of the pepper. Pour this mixture into the pan and cover it, allowing it to cook for 2-5 minutes on a medium-high heat so that you can scrape along the edges with a spatula and pick it up as one piece.

Next, remove your egg mixture from the heat and cut it in half. Lay out 2 strips of your bacon and place half of the egg mixture on top of each piece. Roll them up and place them in another pan with a little bit of butter until the bacon is cooked through and eat them warm or save them in the fridge until tomorrow morning!

Repeat this process with the remaining ingredients! If they aren’t staying in place, feel free to use toothpicks to hold them together.
