Salt Free Salad Dressing

This vinaigrette dressing is tasty, but salt-free for those watching their sodium intake.

  • 1/4 C. sugar,
  • 1/4 C. flour,
  • 2 tsp. dry mustard,
  • 1 1/2 C. milk,
  • 1/2 C. vinegar or lemon juice,
  • 2 eggs, slightly beaten,
  • 1 Tbs. vegetable oil

Mix sugar, flour and mustard in saucepan. Gradually blend in milk and vinegar. Cook over direct low heat, stirring constantly until mixture thickens and boils. Boil 1 minute. Stir half the hot mixture into eggs, then stir it all into the pan. Bring to boil, stirring constantly. Boil 1 minute. Remove from heat and stir in oil. Cool.

Makes 2 C.
