  • 1 pie crust
  • 6 large eggs, beaten
  • 1 C. heavy cream
  • 1 ½ C. cheddar cheesed, shredded
  • Salt to taste
  • Pepper to taste
  • 1 Tbs. hot sauce
  • 2 Tbs. cooked and crumbled
  • 2 tsp. rosemary

Preheat an oven to 375 degrees. Spray a jumbo muffin pan with non-stick spray. Roll out pie crust and cut into 6 circles to cover each muffin slot until the it just peaks over the edges. Bake for 12-15 minutes. Meanwhile, whisk together eggs and cream until fluffy. Add salt, pepper and hot sauce. Stir in cheese. Pour evenly into 6 pie shells. Crumble bacon on top. Bake for an additional 18-20 minutes or until the egg mixture is firm. Remove from oven.

If you do not wish to not serve immediately, store in freezer in a freezer safe plastic bag. Freeze up to two months. To reheat, heat oven to 375 degrees for 8-10 minutes or microwave for 30 seconds to 1 minute.
