Steak is great in the summertime. Whether it's pulling the grill out or throwing it in a frying pan, it's a relatively simple dish that all meat lovers enjoy. With this recipe you can add a little spice to your steak to embrace those summertime flavors.

  • 8 flour tortillas
  • 1 1/2 lb. skirt steak
  • 2 T. canola oil
  • Salt and freshly ground black pepper
  • 1/2 head romaine lettuce
  • 1 medium red onion, thinly sliced
  • 1 red bell pepper
  • 1 yellow bell pepper

Heat grill to high.
Wrap tortillas in aluminum foil and on the top rack of the grill while the steak is grilling.
Heat grill pan over high heat. Brush steak with oil and season with salt and pepper on both sides. Grill on one side until golden brown (about 4-5 mins)
Cook onion and bell peppers over the grill for about 5 mins.
Fill each tortilla with some lettuce, meat, onion, and bell peppers.
