  • 1 tbs. extra virgin olive oil
  • 1 yellow onion, chopped
  • 2 cloves garlic, chopped
  • 1 tsp. herbes de provence
  • 1/8 tsp. kosher salt
  • 1/8 tsp. freshly ground black pepper
  • 2 (19 oz.) cans white beans, rinsed and drained
  • 2 tomatoes, diced
  • ¼ C. white wine
  • ¼ C. fresh parsley, chopped
  • 2 C. Italian-seasoned bread crumbs
  • 2 tbs. fresh parsley, chopped
  • 1 clove garlic, minced
  • ¼ C. extra virgin olive oil
  • 1/8 tsp. sea salt

Preheat oven to 350 degrees F.

In a large skillet, warm 1 tbs. olive oil over medium-high heat. Add onions and cook for 5 minutes or until tender. Add 2 cloves garlic to skillet and cook for an additional minute. Transfer mixture to a large bowl. Add herbes de provence, salt, ground pepper, beans, tomatoes, wine and ¼ C. parsley to bowl. Mix ingredients well and transfer to a 9x13-inch casserole dish. Bake for 1 hour.

To make bread crumb topping, mix bread crumbs, 2 tbs. parsley, 1 clove garlic, ¼ C. olive oil and sea salt. Mix ingredients well and sprinkle over casserole. Bake for an additional 5 minutes. Serve warm.
