  • 2/3 C. shortening
  • 1 1/4 C. sugar
  • 2 Tbs. packed brown sugar
  • 4 eggs
  • 3 1/2 C. all-purpose flour
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 4 ripe bananas, mashed
  • 2 (8 oz.) cans crushed pineapple, drained
  • 2 (12 oz.) semisweet chocolate chips
  • 1 C. red maraschino cherries, chopped
  • 1 C. chopped walnuts
  • Whipped Cream
  • Chocolate Syrup
  • Cherries to garnish
  • Sliced bananas to garnish

Preheat oven to 350 degrees. Grease two loaf pans. In a large mixing bowl, cream shortening, sugar and brown sugar until fluffy. One at a time, add eggs, beating well after each one. Add flour, baking powder, baking soda and salt in a mixing bowl and whisk well.

Alternate adding dry ingredients, bananas and pineapple. Once well blended, fold in chocolate chips, cherries and walnuts. Pour into bans and bake for 1 hour or until an inserted toothpick comes out clean. Allow to cool for 20 minutes. Coat the top with whipped cream, chocolate syrup, cherries and sliced bananas. Serve.
