  • 4 tsp. butter
  • 2 T. flour
  • 2 egg yolks
  • 2 egg whites
  • Salt and pepper to taste
  • 1/2 C. milk

Preheat oven to 375 degrees F. Lightly butter the inside of the ramekins and add the flour. Fill a saucepan with an inch of water and bring to a simmer over medium heat. Place the egg yolks in a bowl and the 4 egg whites in a separate bowl. Toss cheese and flour in with the egg whites and stir with milk. Place the bowl over the simmering water for about 5 minutes. Then add a pinch of salt before removing it from the heat. Mix in the egg yolk and spoon the mixture into the ramekins. Bake for about 15 minutes.
