  • 1 7 lb. chicken
  • 1/4 C. of dry rosemary leaves
  • 1/4 C. dry thyme leaves
  • 1/4 C. chopped garlic
  • 3 medium onions, chopped
  • 3 carrots, chopped
  • 2 celery stalks, chopped
  • 3 lbs. small potatoes
  • 1/4 C. extra-virgin olive oil
  • Salt and pepper

Preheat the oven to 375 degrees. Wash chicken under cold water. Drain and rinse once more. Cut chicken into cubes and drench in olive oil. Season chicken with a substantial amount of salt and pepper. Sprinkle rosemary, thyme, and garlic over chicken. This can either be done the day of or you can go ahead and marinate the chicken the day before. Rub the remaining herbs on the chicken. Scatter the celery, onions, potatoes and carrots around the pan. Place the roasting pan into the oven and roast the chicken for 50-60 minutes, until it is thoroughly cooked. Allow dish to cool for 15 minutes before serving.
